Baked Salmon with Asian Greens

Serves: 4

Ingredients:

4 x 150 gram Tasmanian salmon fillets
3 tablespoons CAPILANO Honey & Ginger
3 tablespoons soy sauce
2 teaspoons sesame seeds
1 bunch broccolini or any leafy Asian vegetables in season (eg gai-lan or choy-sum).
120 grams snow peas rinsed and ends trimmed

Method:

1. Preheat oven to 200°C. Mix
2. CAPILANO Honey & Ginger with soy sauce in a small bowl until combined.

3. Place salmon on baking tray lined with nonstick paper. Spoon half honey soy mixture over salmon. Sprinkle sesame seeds on top and bake in oven for 20 minutes.
4. While salmon is baking blanch vegetables.
5. Heat remainder of honey soy mix in a small saucepan until hot.
6. Place vegetables on plates with salmon and spoon over remainder of honey soy mix.

Notes:

• High in protein.
• Very easy recipe.
• Can add rice for carbohydrates.
