Creamed Honey
Creamed Honey is the product of the deliberate, controlled crystallisation of honey. Crystallisation is a natural phenomena in honey, occurring when glucose, one of the main naturally occurring sugars in honey, spontaneously separates out of the supersaturated solution. The glucose loses water, becoming glucose monohydrate and takes the form of crystal. Capilano have refined centuries old techniques to guide the natural crystallisation of honey towards a completely crystallised stable and uniform end product.
Honey's wonderful natural properties are not altered in the making of creamed honey. To make creamed honey, a technique called seeding is used. A small quantity of already crystallised honey is added to a special liquid honey blend. The addition of crystallised honey (seeding) to the liquid honey accelerates the natural tendency of the liquid honey to crystallise. The seeded honey is packed into jars, held in controlled storage conditions to allow the honey to fully crystallise before being quality checked and released for sale.
