Breakfast Ideas
Honey-toasted Muesli

Choose your favourite combo of ingredients from our suggestions. To reduce fat content, replace half the oil with apple juice. Makes 8 cups
Ingredients:
- 3 cups rolled oats
- 1 cup roughly chopped nuts (almonds, pecans, pistachios, macadamias)
- ½ cup wheatgerm or unprocessed bran
- ½ cup desiccated (or shredded) coconut
- ½ cup sunflower seed kernels or pumpkin seeds (pepitas)
- ¾ cup CAPILANO honey
- ½ cup vegetable oil
- 1 cup roughly chopped dried fruit (apricots, sultanas, cranberries, apples, pears – one or a mixture)
Method:
- Preheat oven to 140°C/120°C fan-forced. Combine oats, nuts, wheatgerm, coconut and seeds in a large bowl. Add combined CAPILANO honey and oil. Mix thoroughly to coat.
- Spread mixture on 2 large, shallow baking trays. Bake for 30 minutes, stirring every 10 minutes, until evenly toasted and golden.
- Turn off oven. Stir through dried fruit. Leave muesli in oven 10 minutes, then remove. Cool completely, stirring occasionally (mixture will lose its stickiness and become crunchy). Store in an airtight jar.
Ricotta & Honey Hotcakes

To save time at breakfast, make batter the night before. Store, covered, in the fridge. Serves 4
Ingredients:
- 375g low-fat smooth ricotta
- 2 tablespoons CAPILANO honey
- ¾ cup low-fat milk
- 4 eggs, separated
- 1 cup plain flour
- 1 teaspoon baking powder
- Cooking oil spray
- 1 cup fresh or frozen blueberries
- Grilled bacon, to serve
- Honey Lemon Butter Sauce, to serve (recipe follows)
Method:
- Place ricotta, CAPILANO honey, milk and egg yolks in a mixing bowl. Whisk to combine. Sift together flour, baking powder and a pinch salt. Stir through the cheese mixture until smooth. Beat egg whites to stiff peaks, using an electric mixer. Lightly fold through batter.
- Preheat oven to 100°C. Place a large, non-stick frying pan over moderate heat. Lightly spray with oil. Drop 2 tablespoons batter at a time in pan. Cook for 1 minute. Dot with a few berries. Flip over. Cook until cooked through and golden.
- Stack hotcakes as they cook on a tray in warmed oven. Serve with bacon and Honey Lemon Butter sauce.
Honey Lemon Butter Sauce
Recipe courtesy of Recipes + magazine. Preparation: 2 minutes. Cooking: 2 minutes Also perfect on desserts such as bread-&-butter custard and gingerbread. Makes about 1 cup
Ingredients:
- ¾ cup CAPILANO honey
- ¼ cup lemon juice
- 1-2 tablespoons butter
Method:
- Place all the ingredients in a small saucepan. Stir over moderate heat until butter melts. Simmer 1 minute. Serve warm.
Fruit Salad
Prepare a bowl of fruit salad with any combination of fruits, dollop with vanilla yoghurt, a squeeze of CAPILANO honey and finish off with a sprinkling of crushed pistachio nuts.
Toast
Spread toast, crumpets, muffins or bagels with butter and top with a generous serve of CAPILANO honey.
Cereal
Drizzle breakfast cereals and porridge with CAPILANO honey.
Pancakes
Top pancakes with a squeeze of lemon juice and a drizzling of CAPILANO honey.
